So, we are trying something a bit different.  

This is for all you gardening geeks out there 🙂  

Beets are among my favorite vegetables. So delicious. Love the earthy flavour. Beet greens…are also very delicious in a salad and so incredibly healthy. You can almost taste the nutrients.

Now, here is the rub when one is farming.  Beets like a 12-inch spacing to give them room to grow. Beet greens can be planted on a 6-inch spacing or less.  So what I decided to do was plant ALL of our first round of beets on a 6-inch spacing. What can I say, but I am an ‘all in’ sort of person….lol.

This is a bit of an experiment. We will harvest every other row, selling them first as beet greens, then as a bunch of small beets, leaving the remainder to fill out to full size.

The plan looks great on paper.  This could actually work for a lot of leafy crops. Kale and chard are also very nice in the baby form. The leaves are tender and yet very nutrient-dense. Much like a microgreen, actually.

So the beet greens are a must-try 🙂
